With the rise of the craft rum movement, there are so many awesome rums to mess around with. For this Daiquiri cocktail recipe, I used Stiggins' Fancy Plantation Pineapple Rum. Rich, refreshing and comforting, subtle but with a lot of complexity.
It's loaded with tropical flavors: banana, lime & pineapple, along with comforting notes of clove and brown sugar. But it's beauty—its the subtle complexity.
- Spray pineapple leaf with spray. Set aside to let dry.
- Add rum, syrup and lime juice into shaker.
- Add ice.
- Strain into coupe.
- Add pineapple leaf.
